THURSDAY: SPINACH AND MUSHROOM STUFFED MANICOTTI (CHICKEN UPON REQUEST) WITH A WHITE WINE SAUCE OVER THE TOPPED: these stuffed manicotti noodles are packed full of spinach, mushrooms, shallots and ricotta cheese then drowned in a white wine sauce to make your heart sing...chicken can be added as well if you like!

TUESDAY: CHICKEN AND MUSHROOMS IN A BALSAMIC CREAM SAUCE OVER EGG NOODLES; tender chicken breasts and mushrooms in a creamy balsamic cream sauce over egg noodles.
WEDNESDAY:GREEN CHILI CHICKEN ENCHILADAS; teneder chicken and fresh green chilies.
THURSDAY:SIMPLY AMAZING BEEF ENCHILADAS; fresh ground beef, cheddar cheese, scallions, black olives all wrapped up in warm corn tortillas, smothered in a red chili sauce and topped with more cheese.

WEDNESDAY: CHICKEN MANICOTTI; tender chicken seasoned and stuffed into manicotti noodles and covered in a creamy cheese and broccoli sauce!
THURSDAY: BAKED RIGATONI WITH BECHAMEL SAUCE: rigatoni pasta in a heavenly bechamel sauce with bacon layered throughout!

Well we survived the big chill of last week! I hope everyone is safe and warm with no broken pipes to speak of!
Well as we look forward to another week and lots on our schedules let me help make your dinner time easier!
MONDAY: SOURCREAM ENCHILADAS: these are corn tortillas packed with sourcream, cheese, green onions and tender chicken.
TUESDAY: COMFORT MEATBALLS WITH TWICE BAKED POTATOE CASSEROLE: These are just yummy and as the name suggests full of comfort and warmth! The potatoe casserole is just what is says all the goodness of a twice baked potatoe without the skin!
WEDNESDAY: CHICKEN AND NOODLES WITH FRESH BREAD: This is at the top of my list of true comfort foods!! Nothing makes your day feel all better than a hearty bowl of this all time favorite dish.
