MENU FOR THE WEEK OF MARCH 30 - APRIL 1

Great weekend enjoying basketball and family...got to spend some time with my amazing niece Anna and two adorable nephews Alex and Adrian in Ft. Worth...can not believe how much they have grown in just a few months.

The weather is turning warmer and the flowers are trying to start blooming so this week I am going to do some fun meals that are a little lighter in the calorie end as we all start to get that bikini body in shape :O)!!!

MONDAY: CLOSED GOLF IN VEGA WITH TIFF! SHE GOT FIRST SO IT WAS WONDERFUL

TUESDAY: STUFFED ROLLS..YOUR CHOICE HAM, BACON, SAUSAGE (POLISH OR BREAKFAST) PEPPERONI...ALL WITH CHEESE AND STUFFED IN MY HOMEMADE BREAD...THESE ARE NOT ON THE LIGHTER SIDE BUT THEY ARE SO GOOD AND GREAT FOR LUNCHES.

WEDNESDAY: STEMMED FISH WITH GINGER AND FRESH VEGGIES OVER LO MIEN NOODLES; this is a great meal firm white fish with snow peas mushrooms and thin sliced carrots.

THURSDAY: CAJUN SHRIMP AND RICE; Yummy shrimp in a Cajun sauce, with plum tomatoes and veggies over sticky rice.
