MERRY CHRISTMAS AND HAPPY NEW YEAR!!!!

As we bring in this Christmas may we each be filled with the Joy that only can come from the comfort of family, friends and faith! I am wishing each of you a blessed Christmas and an amazing New Year soon to come...I hope as we look back on the past year we can reflect on many accomplishments as well as those times we could have done more, and look into the New Year with the courage to be the person who gives more, cares more and tires harder to make our world around us a better place to be!


IN A BIND COOKING will be taking the week of December 26-31 off to be with family and just kick her heels up a bit...however as always if you find yourself "in a bind" give me a call and I will see what I can do!!

Well the wind is blowing today..hopefully it will blow in some rain for us. Had a great weekend cooking for a special friend and her Trunk Show event thanks Aryn for the opportunity.

Well Halloween has come and gone and here we are the First of November! Hard to believe how fast the days are flying by.

IN A BIND COOKING will be closed Monday and Tuesday but ready to go on Wednesday with something new and exciting on the menu!!

Well the weather man says cooler temps are headed our way and I can't wait!! After a wonderful lunch at St. Anthony of Dalhart's school Oktoberfest...I think it is time to turn the temps down for good.

Well after a whirlwind trip to College Station to get Tiff all moved in and furniture painted, shopping done, new covers for chair cushions, then stopping through Lubbock to get Vance set up for this upcoming semester we are home. One of my favorite parts of the trip was of course the time I spent with Tiff and her wonderful roomies, but the side trip through Homestead in Hico, Texas what a great place...can't wait to return and explore some more.


With back to school knocking at our door today keep in mind I can help you out with breakfast ideas and also some fun and good for you lunch items as well.

Well whether I am ready or not the time has come to take Tiffany to College Station where she will spread her wings and learn to fly! Vance begins his journey down the road to an Accounting degree and Samantha starts her sophomore year of high school. I look back and wonder how it all happened so fast, and then remember I was there for them from the very beginning loving, guiding, teaching, crying and laughing with them all the way!! Good luck to my little chicks!!!


On to the food, due to the fact we are traveling this week I will have a menu for Monday August 16 and Tuesday Aug 17;


MONDAY: COWBOY CALZONES; These were on the menu last week and I had some who missed out on them so here is a second chance to grab them...they are a great lunch or dinner and travel well to school or work.

Well our travels last week to College Station were lots of fun, got Tiff in all her classes and part of her things moved down. A few more weeks and she will be a full fledged Freshman at Texas A&M! Hard to believe but so excited for her journey!!


On to the Menu:

MONDAY: DELI PASTA SALAD WITH BLT WRAPS: This pasta salad is full of deli items black olives, chunks of mozzarella cheese, hard salami, celery and fresh Parmesan cheese. The BLT wraps are extra yummy as the tomatoes are in the sun dried tomato dressing...you will enjoy these. $30.00

TUESDAY: APRICOT CHICKEN AND STEAMED RICE; Tender chicken in a to die for apricot sauce made with fresh apricots right off my tree. $30.00

WEDNESDAY: ITALIAN BAKED CHICKEN AND PASTA; chicken with garlic, onion diced tomatoes all blended together with pasta and cheese and baked to delight! $30.00

Hard to believe that June is nearing an end...won't be to long and we will be back to school!! But for now I hope you are all enjoying your summer and getting to relax just a bit.

Had a busy and eventful weekend, rehearsal dinner for a charming young couple and the desert bar at the reception, neat idea this bride had...I think I like it and may use it when my girls get ready to marry...she gave her bouquet to the couple at the wedding who had been married the longest!!!


On to the menu:

MONDAY: PIZZA POT PIE; This is your pizza all mixed up and under a crust....yummmmy, my friend Lisa told me about this one, hamburger, mushrooms, olives, cheese, onions, peppers and sauce! If you don't want certain items I can take them out for your individual taste. $30.00

TUESDAY: CHICKEN PARMESAN; Tender chicken breasts lightly breaded and then baked in a tomato sauce and topped with mozzarella cheese. $30.00

WEDNESDAY: CHICKEN POT PIE UNDER A HERB CHEDDAR CRUST; this is a treat chicken and veggies in a creamy sauce under a blanket of herb ensued cheddar crust. $30.00

It is hard to believe that June is nearly over, where did it go? I hope everyone is enjoying these summer days. A special blessing goes out to all the Father's in our lives I hope they may all know how very important they are to us.


MONDAY: ITALIAN CHICKEN AND DUMPLINGS; If you love Chicken Fricassee, chicken and biscuits, or the original chicken and dumplings you will love this Italian take on the them. Here basil, pesto is stirred into the light gravy fresh dumplings tossed in a lemon butter makes these dumplings pop! $30.00

Well last week was fast and furious...thanks for all the help I had for the Chamber Banquet..it was a great experience and I learned alot.

MONDAY: No meal as we will be in Lubbock for the second round of district golf.

TUESDAY: RAVIOLI BAKE; This one is a family pleaser, cheese filled ravioli with a lean ground beef center topped with another layer of ravioli all in a marinara sauce.

Great weekend enjoying basketball and family...got to spend some time with my amazing niece Anna and two adorable nephews Alex and Adrian in Ft. Worth...can not believe how much they have grown in just a few months.

The weather is turning warmer and the flowers are trying to start blooming so this week I am going to do some fun meals that are a little lighter in the calorie end as we all start to get that bikini body in shape :O)!!!

MONDAY: CLOSED GOLF IN VEGA WITH TIFF! SHE GOT FIRST SO IT WAS WONDERFUL

TUESDAY: STUFFED ROLLS..YOUR CHOICE HAM, BACON, SAUSAGE (POLISH OR BREAKFAST) PEPPERONI...ALL WITH CHEESE AND STUFFED IN MY HOMEMADE BREAD...THESE ARE NOT ON THE LIGHTER SIDE BUT THEY ARE SO GOOD AND GREAT FOR LUNCHES.

WEDNESDAY: STEMMED FISH WITH GINGER AND FRESH VEGGIES OVER LO MIEN NOODLES; this is a great meal firm white fish with snow peas mushrooms and thin sliced carrots.

THURSDAY: CAJUN SHRIMP AND RICE; Yummy shrimp in a Cajun sauce, with plum tomatoes and veggies over sticky rice.

Well Spring Break came and went way to fast! Enjoyed the time with the girls but feel we are no closer to Tiff making a college choice yet!! Oh well it will happen!

Hard to believe that March is already half way over and we are headed into Spring and all the fun that goes with that.

This week I will be offering several choices...hope you will enjoy!

MONDAY: SIMPLY GREAT ENCHILADAS (BEEF); These are really good and fills everyone up! Lean ground beef seasoned and then wrapped in a warm corn tortilla, and topped with a red sauce! $30.00

TUESDAY: CHICKEN IN A BALSAMIC CREAMY MUSHROOM SAUCE OVER NOODLES; Sauteed chicken breasts in a creamy balsamic mushroom sauce over warm buttered egg noodles. $30.00

Well get ready here comes the snow again!!! I am pleased to say we did get the tree branches all picked up from the last storm that rolled through, gives me a happy feeling when I look outside and don't see a war zone of broken tree limbs.

Had a great week with Katie Visco back visiting Dalhart, makes me see our wonderful community in a whole new light.

Well the snow is here to stay for a while I do believe! That is okay it makes people want to stay in and eat some comfort food..so this week I plan to give them some. There will be no meal Tuesday as we travel to Perryton for the last District game of my daughter's senior year...hard to believe this, they cinched a Playoff spot this past Friday night against Lubbock Cooper...great game.

I was also very privileged to cater the meal for the Central Methodist Church today, had the whole Schumacher gang minus Vance working, I appreciate them greatly.

Hey there friends, hope everyone has had a great week, mine flew by. I am now officially sure why God gives us children when we are young. I had a great time with our three extra house guests this past week, the brought a great deal of laughter and joy into our home. Thanks to their parents for sharing them with us.

Now this week I will be offering only three meals as I have two events to prepare for this upcoming weekend, very excited to do both these the rehearsal dinner for my very dear friend and her fiance'. Going to have a yummy menu!!!

Well here we are already the third week in Jan. How did that happen so fast? Though the weather is not giving us the moisture we need up here in the Panhandle we are truly blessed with great health, friends and family. Our house is bustling this week with three extra kiddos which has been lots of fun and has given me a new appreciation for young mothers and all they do each and everyday.

MONDAY: LASAGNA; this classic favorite is full of lean ground beef, cheese, and the tangy tomato sauce we all love. $30.00

Well we all made it through the first week back to school and the routine of up at 5:30 for basketball practice again. Hoping for some moisture sometime very soon...need a little snow to make it feel like winter.

Well hope everyone had a very safe and blessed New Years. Hard to believe a new year is upon us. Here is to hoping 2010 is wonderful for all.

We had a great Christmas season but I must say I am ready to get back to work, spent time with family and made lots of trips to the Lubbock area for Basketball games.


One to the Menu:

MONDAY: BACON WRAPPED MEATLOAF; I know so many times we hear the word "meatloaf" and think of oh no not that...but I promise you this will please not only you but everyone in the house. Lean ground beef and spices wrapped in a bacon crust topped off with a tomato gravy...oh bring it on. $30.00

TUESDAY: CANNELLONI STUFFED WITH MEAT AND CHEESE; egg pasta spread with the beef, ham and cheese mixture and rolled up covered in a beachamel sauce...a white cheese sauce. The Godfather would be proud to have you serve this to your family. $30.00

WEDNESDAY: BAJA LASAGNA; this is a tex mex take on a classic Italian dish, filled with chicken and cheese in a green chili sauce. $30.00

THURSDAY: CHICKEN AND GARLIC-HERB POTATO SHEPARD'S PIE; this a a decidedly light cousin to the heavy beef and potato pies. This meal is perfect for a winter dinner or really anytime of the year. $30.00
