MONDAY: BIEROX CASSEROLE: I love the original bierox and dream of them often..haha...however in a pinch this will do the trick as well! Lean ground beef, cabbage, cheese all layered under a flaky crust!

TUESDAY: CHICKEN AND NOODLES; Yummy yummy in your tummy! Just right for a cool fall night!

MENU FOR THE WEEK OF OCTOBER 24 - 27

Hard to believe we are this far into October, it is almost over and along with it comes the busy times that will be here for us all as the holidays are just around the corner! Please be sure and book your holiday events early so we can get them on the books and planned.

MONDAY: BEEF AND BEAN BAKE; This is a great meal for the whole family, lean ground beef, baked beans and bacon all baked up to a warm and happy mouthful. Fresh rolls on the side as well!

TUESDAY: STUFFED ROLLS: your choice of pepperoni, bacon, ground beef or ham! All tucked neatly with cheese in my homemade rolls and baked to a golden brown ready for your plate and I promise one is never enough!!

WEDNESDAY: SHEPARDS PIE: lean ground beef, veggies and a beef gravy all under a layer of cheesey mashed potatoes warmth to the soul!

TUESDAY: BEEF STROGANOFF; tender beef, in a creamy mushroom sauce over buttered egg noodles.

WEDNESDAY: SHIRMP ENCHILADAS; Oh boy this one is a keeper, plump shrimp in a cheese mixture in flour tortillas, smothered in a warm cream sauce and topped with fresh tomatoes, parsley and onions.

THURSDAY: COWBOY CALZONES; lean ground beef, spicy breakfast sausage cheese all wrapped up in homemade calzone dough and baked, it is a hand full of yum!

MENU FOR THE WEEK OF SEPTEMBER 26 - 29

Happy Week, Fall as made a few shining moments just to get us all inticed and excited for what is to come! I have spent the past week preparing the change from summer to fall throughout the house! All that I need is the glorious pumpkins that are just about ready out in the field!

MONDAY: SOUTHWESTERN LASAGNA TORTE; This is a fun twist on the traditional pie that we all love!The flavors are bold and exciting! Made with ground pork seasoned and then layered in with corn, salsa, jalepenos, and a suprise guest peas...yes they are amazing, a little green that will do you good!

TUESDAY: RAVIOLI BAKe; This is a great meal that the whole family will love! Lean ground beef layered between cheese ravioli and cheese all smothered in a marinara sauce!

WEDNESDAY: JULIAN'S TUSCAN BEAN STEW WITH SAUSAGE; I am going to tell you plain and simply this is amazing! A must taste and savor kind of meal! My friend came up with this stew and as with all Julian's dishes they are amazing and full of flavor that is complex and never ending! I will serve it with my fresh crusty and oh so yummy french bread!

THURSDAY: GRILLED CHICKEN BREASTS STUFFED WITH GOAT CHEESE AND SERVED WITH SMOKED CHILE CILANTRO SAUCE; add a great tossed salad with this meal and you are set to go!

MENU FOR THE WEEK OF SEPTEMBER 19 - 22

As the summer is coming to an end and the cooler temps have us all anticipating the beauty of fall....it also has me on high "comfort food" alert!! So this week it is all about comfort plain and simple!


MONDAY: BAKED RIGATONI AND ITALIAN SAUSAGE WITH BECHAMEL SAUCE; This is a simple yet yummy meal all rolled into one...the creamyness of the Bechamel sauce that wraps around the rigatoni and spicy sausage makes for happy tummys in the end.

TUESDAY: PW'S CAJUN CHICKEN PASTA: This is as good as it gets, pasta cajun spiced chicken all together for a fun and tasty meal.

WEDNESDAY: CHICKEN AND NOODLES (with fresh cinnamon rolls): This is one of my all time favorites...the only to make it better would be a pan of fresh cinnamon rolls!!! So lets throw those in as well!!!

THURSDAY: GINGERED BEEF WITH SNOW PEAS AND ALMOND RICE: This is a great meal, light yet full of bold taste, tender flank steak marinated in a ginger soy sauce then cooked up to perfection add some fresh snow peas and poured over a bed of almond rice....yes that is good!!

THE WEEK OF AUGUST 29 - SEPTEMBER 1

The first day of school has finally arrived and as my oldest starts a new job today in Lubbock and then classes on Thursday begin in Red Raider World, my little middle gal has a job interview and then gets ready for classes to begin in Aggie Land and my baby starts her Jr. year of High school I am sad that the house is so quiet but also excited to see what is in store for each of them!

MONDAY: CLOSED

TUESDAY: GREEN CHILI CHICKEN ENCHILADAS; tender chicken and green chilis all piled up with fresh corn tortillas and cheese!

THE WEEK OF JULY 18 - 21

Today I was reminded that school is just 4 weeks away, I can not believe how fast the summer has gone, even though the lack of rain has put a bit of a gloom over us here in Texas this summer, I know we are all thankful for the gifts we have each been given!!

On to the menu: This week I am bringing in some new items for the menu I hope you enjoy them!

MONDAY: MEXICAN CHICKEN; Tender chicken breasts, layered with flour tortillas and a rich cheese sauce all baked up to a yummy major comfort food meal!

TUESDAY: CHINESE CHICKEN SALAD WITH RED CHILI PEANUT DRESSING; This one just called out to me as I am crazy for chicken salad....this one has a twist, as it is layered over a bed of Napa Cabbage with a wonderful spicy peanut dressing! sure to wake up your taste buds.

WEDNESDAY: MAC AND CHEESE CARBONARA; When one thinks of comfort they often gravitate to Mac and Cheese! This one is has a little bit of a grown up flavor with smoked bacon, asiago, white cheddar, cheddar and and Parmigiano Reggiano cheese!

THURSDAY: TANDOORI SPICED CHCIKEN BREASTS WITH GRILLED TOMATO JAM AND HERBED YOGART SAUCE WIHT PITA BREAD TO WRAP IT ALL UP IN; This one is a fun summer meal, not to heavy but full of flavor and fun!

THE WEEK OF JULY 11 - 14

Well the weeks seem to be flying by and summer reaching it's peak! Here is hoping everyone is taking a little time to enjoy the blessing's we have before us each day!

MONDAY: SHEPARDS PIE; this is just plain good! lean ground beef in a hearty gravy with veggies and cheese all under a blanket of creamy mashed potatoes and baked to a warm delight!

TUESDAY: LINGUINE WITH A CHICKEN RAGU; tender chicken diced and sauted in olive oil and mixed into a garlic wine sauce, swirled into a fresh marinara sauce and laid on a bed of linguine!

WEDNESDAY: CHICKEN SPAGHETTI; this is an all time favorite!

THURSDAY: ROSEMARY CRUSTED CHICKEN OVER A BED OF RIGATONI IN A LEMON BUTTER SAUCE; this is one of my favorites fresh rosemary, panko crumbs coat tender chicken breasts that are sauted in butter and olive oil.

Well the heat seems to be never ending and the need for rain is not less! But the hope we all have that the heat will cool down and the rain will come is even greater!

MONDAY: COWBOY CALZONES; these little pockets full of ground beef, sausage, tomatoes, ricotta and monteray jack cheese are a bite of heaven!

TUESDAY: CHICKEN MANICOTTI; This is a great meal that is full of flavor, manicotti noodles stuffed with tender chicken breasts and smothered in a cheesey broccoli sauce!

WEDNESDAY: THAI CHICKEN WRAPS AND BROCCOLI SALAD; teneder chicken breasts grilled and wrapped in a flour tortilla with a chinese slaw and spicy peanut dipping sauce on the side with a great broccoli salad!

THURSDAY: APRICOT CHICKEN; Tender chicken in a FRESH and I mean FRESH apricot sauce! (my tree is full this week of ripe apricots)

THE WEEK OF JUNE 12 - JUNE 15

Well what a crazy few weeks this has been, but ever thankful for the blessings I have recieved.

This week I became a Great Aunt again, my beautiful little niece and her darling husband had their first child Lucas Orlando Ponce' welcome to our lives.

MONDAY: SHRIMP ENCHILADAS; Well these are always a favorite to so very many and I will be up to my elbows I am sure Monday afternoon getting them ready so order early on this one please.

TUESDAY: SUNBURST SALAD WITH AVOCADO DRESSING AND FRESH BREAD; This is a great fun salad with romanin lettuce, cucumbers, black beans, corn, tomatoes scallions and grilled chicken, the dressing by itself is a wonderful delight!

WEDNESDAY: PENNE PASTA WITH SHRIMP AND FRESH BREAD: this little comfort item is worth every calorie it holds.

THURSDAY: GREEN CHILI CHICKEN ENCHILADAS: tender chicken breasts, with fresh green chilis and corn tortillas.

THE WEEK OF JUNE 6 - JUNE 9

Well the weekend has come and gone and another week awaits us all! Hope you are getting into the swing of summer and sun!

MONDAY: BACON WRAPPED BLUE CHEESE STUFFED CHICKEN BREASTS WITH SHINER BOCK SMASHERS! Oh this one is a little on the guilty pleasure side but hey isn't that all part of summer fun! Tender Chicken Breasts, stuffed with blue cheese and then wrapped in smokey bacon...oh yes and then on the side a delicous mashed potatoe dish that will make you dreamy with delight, take a few Idaho's and a few sweet potatoes and smash those babies up add some Shiner Bock Beer a little butter cream and then a delightful ancho puree that gives it that little bit of a kick!

TUESDAY: BAKED ZITI WITH FRESH RASPBERRY COBBLER; Ziti pasta mixed together with hot italian sausage, tomatoes, pesto ricotta cheese adn fresh spinach then topped with mozzerella and parmesan cheese and baked to please!

WEDNESDAY: GRILLED CHICKEN SAMMIES ON CHIBATA BREAD WITH A PASTA SALAD ON THE SIDE! This is a great summer dinner with a crowd pleasing appeal!! Enjoy Enjoy Enjoy!!

Happy Memorial Day! I hope this weekend has been a great time of fun, family and above all else rememberance of our fallen heros who have fought throughout the History of our nation to keep us free! As well as a huge thank you to all the soldiers who are still fighting to keep us free!

Well the Schumacher house was a wonderful place to be this weekend as we welcomed a very special house guest, and I am ever thankful that she did not run screaming from us when she left with Vance today...welcome Cicily!

Now onto the menu as it has been way to long since I have posted one!

MONDAY: CLOSED FOR MEMORIAL DAY

TUESDAY: STUFFED ROLLS YOUR CHOICE (HAM, PEPPERONI, BACON OR SAUSAGE) ALL WITH CHEESE THESE COME IN ANY NUMBER OR ASSORTMENT YOU WISH!

WEDNESDAY: CHICKEN CACCIATORE: This is a grea meal, full of flavor flavor flavor! Chicken, sauted and then bathed in a warm brandy sauce with mushrooms, onion tomatoes and fresh rosemary from the garden all poured over a bed of buttered pasta!

THURSDAY: LASAGNA; Well this one is a favorite and worth the time it takes to make as the moment it hits your lips you know, you are home!!

Happy May Day to you all! Hope this weekend has been a good one, many thoughts to the people in Alabama and Mississippi as they begin the clean up and continued search for loved ones.

With the weather causing me great confusion as to what season we are in here in the great northern tundrea of the Texas Panhandle, this weeks menu has a little bit of all the seasons.

MONDAY: GREEN CHILI CHICKEN ENCHILADAS; These will warm you up this day as the weather looks to be chilly at best. Tender chicken, fresh green chili's corn tortillias and cheese all baked up to a big smile for everyone.

TUESDAY: PARMESAN CHICKEN WITH PENNE PASTA IN A TOMATO BASIL CREAM SAUCE; Yummmmmm.....tender chicken breaded and sauted in olive oil and butter then baked to perfection and served over penne pasta with a rich and tangy tomato basil cream sauce.

WEDNESDAY: CLOSED FOR SPECIAL EVENT

THURSDAY: SESAME CHICKEN SALAD WITH ROSEMARY OLIVE OIL AND BLACKED CRACKED PEPPER KNOTS; Tender chicken in a tangy sesame sauce, plated over a bed of greens, and topped with chinese noodles and a gingerroot dressing! Along with the bread knots that are worth every bit!

MENU FOR THE WEEK OF APRIL 24 - 28

Today is Easter and as we celebrate the Resurrection of our Lord, I come to recall that He is the "Bread of Life" through Him our spiritual lives are fed and our souls noursished.

In keeping with the theme of Bread and life, my mind began to wonder (as it often does)on my own love of Bread...I never knew, I had this passion until I ventured home with my then "boyfriend" Stephen to meet the family. You must understand that bread in my home growing up was wheat or white from a bag and only "daddy" had it with his meal. I found it boring without flavour and SQUARE!

So as I set down with this family that would soon welcome me as one one of their own, I have for the first time the pure pleasure of "BUTTER BREAD" yes you heard me right, plain white bread with BUTTER!

Well to make a long story short, which is always painful for me, I was sure I was in love not only with Stephen and his family but Bread and Butter. Side point to the story Alex has always stated that Grandma Schumacher should open a resturant and sell "toast" all day..he believes she would make a killing...and I have a firm thought that she would.

Through the past 23 years I have thrilled at the adventure of trying new breads, experimenting with additons to my dough but never forgetting that when we sit together as a family and break bread our hearts and bodies are filled with not only physical nourishment but with the unending love of family and faith.

ON WITH THE MENU:

MONDAY: MACADAMIA AND PANKO CRUSTED CHICKEN WITH AN ORANGE BUTTER SAUCE OVER PENNE' PASTA AND A FRESH BAGUETTE; tender chicken breasts dipped and battered in a panko and macadamia nut crust sauteed in butter and baked to a delicate tenderness with a penne pasta in an orange butter sauce and a fresh baguette!

TUESDAY: LEMON CHICKEN TORTELLINI SOUP WITH A CRUSTY COUNTRY PAIN (BREAD)
tender chicken, tortellini and greens, all in a broth that screams comfort, along with a country loaf of pain (bread) sure to please and comfort a hard day
WEDNESDAY: MINI PAELLA WITH FRESH BREAD; tender chicken, chorizo , and shrimp in a saffron sauce with couscous. I promise you will like this!

THURSDAY: CHICKEN WITH MUSHROOMS IN A BALSAMIC CREAM SAUCE OVER NOODLES WITH OF COURSE BREAD! I should call this my Karley White meal as it is one of her favorites! but to tell the truth it is a favorite of all who par-take! so jump in and join the club, it will become if not already a favorite.

Well here we are and "Holy Week" has finally arrived! I hope everyone had a blest and positive Lent!

We had a wonderful weekend in Fort Worth with family, makes me wish we were closer and able to celebrate in all the events of family

MONDAY: CLOSED

TUESDAY: SPINACH, MUSHROOM AND CHICKEN STUFFED LASAGNA ROLL UPS IN A CREAM SAUCE! Take a break from the hustle and bustle of Holy week!

WEDNESDAY: GREEK SALAD WITH GRILLED CHICKEN AND CRUST BREAD; Romaine lettuce, tomatoes, red onion, olives, feta cheese, along with grilled chicken all under a wonderful red wine dressing served along side a crusty loaf of fresh bread.

THURSDAY: STUFFED POBLANO PEPPERS WITH SHRIMP, SAUSAGE, BLACK BEANS AND RICE WITH A WARM WHITE SAUCE.

MENU FOR THE WEEK OF APRIL 11 - 14

Well here we stand the week away from Tax Day! And I am happy to say I actually have mine done!

If you need a little help in the kitchen this week let IN A BIND help you out!

MONDAY: BEEF STROGANOFF; This is tender lean beef sliced and cooked up in a creamy mushroom sauce over a bed of egg noodles, sure to push any blues out of your day!

TUESDAY: PEPPERONI STUDDED LASAGNA; really excited to try this one out! lasagna stuffed with pepperoni, italian sausage, fresh tomatoe sauce, mozerella, ricotta and parmesan cheese!

WEDNESDAY: THAI CHICKEN WRAPS WITH PEANUT DIPPING SAUCE AND DELI PASTA SALAD; These are so yummy and just a fresh and fun meal, sideup with Hearty Deli pasta salad and I think spring just may arrive for good!

THURSDAY: COMFORT MEATBALLS AND TWICE BAKED POTATO CASSEROLE; This is just a make me happy meal! A chase away the blue sky kind of smile will appear on you face after just the first bite!

THE WEEK OF MARCH 28 - MARCH 31

Well we got just a wee bit of moisture last night or early morning...made for a chill start, however the sun is shinning now and it is gorgous!

IN A BIND will be in the kitchen this week working fast and fourious in preperation for this years Chamber Banquest scheduled for April 7! I am super excited about this event as it is a great time for our community to come out and support our Chamber of Commerce that works so hard for us as buisness's and also as a community! If you haven't purchase your tickets there is still time.

MENU FOR THE WEEK OF MARCH 21 - 24

Well after a great Spring Break sharing time with our kids and a great time celebrating Stephen's birthday with wonderful friends! I am ready to hit the kitchen again! Hope everyone is ready to jump back into the busy weeks ahead of us until Easter Break.


MONDAY: CHICKEN POT PIE WITH STRAWBERRY COBBLER; This is a great Pie...tender chicken breasts, carrots, celery, onions and potatoes all in a rich sauce topped with a rosemary cheddar crust. The fresh Strawberry cobbler is one of the best I have had, rich and creamy full of that great sweet and tart strawberry zing!!! Better have some ice cream on hand.

TUESDAY: RAVIOLI BAKE WITH FRESH FRENCH BREAD; Tender cheese ravioli, in a rich marinara sauce and mozzerella cheese...with warm fresh bread on the side!! Your long day will seem like it never happened!

WEDNESDAY: EGG PLANT PARMESIAN WITH HERB POLENTA; This dish is a favorite, can be prepared with chicken or with out...but I promise you will be wanting more!!!

THURSDAY: DIVINE CHICKEN AND GREEN BEAN BUNDLES; to say this Chicken is Divine is no joke!! Tender chicken breasts, shallots, butter, white wine and cream!! With a tender broccoli and swiss cheese!!

Well after a great weekend with good friends and sharing good food, IN A BIND is ready for a great week! With Spring Break just around the corner and a small break from the hustle and bustle of school, I am planning on some just plain yummy and comforting foods to get us all to the next week!

MONDAY: CHARRED CHICKEN CAESER SAMMIES WITH CHEESE TORTELLINI SOUP; these yummy sandwhiches with a tangy caesar over grilled chicken and romain lettuce of ciabatta bread. Cheese tortellini soup with fresh spinach and bacon in a tasty broth!!

TUESDAY: CHICKEN AND NOODLES IN FRESH BAKED BREAD BOWLS: This is just a great dinner that soothes the hustle of the day away, tender chicken and noodles all packed into fresh bread bowls!! Not a drop will be left!!

WEDNESDAY: SHRIMP ENCHILADAS; tender shrimp wrapped in flour tortillas and smothered in a warm white sauce and a pico!

THURSDAY: STEAK HOUSE SHEPARDS PIE; this is not your everyday pie...stuffed with lean ground sirloin and mushrooms and onions all under a warm and comforting bed of cheesy mashed potatoes!!

WOW!!! Here we are already at the end of February, how the days go by so quickly! Many of you are now into either basketball playoff's on the road to State...Way to go Lady Tigers of Hartley! Others have started the track and golf season! Hoping all the young folks great success in all their events. However with such a busy on the go time ahead of us, let IN A BIND help you out with all your meal needs.

MONDAY: STUFFED POBLANO PEPPERS IN A WARM CREAM SAUCE: These are a great meal all in one, stuffed peppers with shrimp, kelbasa sausage and black beans and rice all smothered in a warm and creamy sauce and baked to warm your hearts!!

TUESDAY: ORANGE-BALSAMIC CHICKEN WITH ASPARAGUS, GREEN BEANS AND POLENTA: Tender Chicken Breasts, browned in olive oil along with steamed asparagus and green beans layered over polenta and then topped with an orange sauce!

WEDNESDAY: DEVLISH SESAME CHICKEN AND LO MEIN NOODLES: Sesame chicken over yummy Lo Mein noodles...sure to make your mid week blues run for the door!

THURSDAY: SPINACH AND MUSHROOM STUFFED MANICOTTI (CHICKEN UPON REQUEST) WITH A WHITE WINE SAUCE OVER THE TOPPED: these stuffed manicotti noodles are packed full of spinach, mushrooms, shallots and ricotta cheese then drowned in a white wine sauce to make your heart sing...chicken can be added as well if you like!

WEDNESDAY: CHICKEN AND NOODLES WITH FRESH BREAD: This is at the top of my list of true comfort foods!! Nothing makes your day feel all better than a hearty bowl of this all time favorite dish.

Well as we are all back into the swing of school and the work week, we are now faced with the upcoming Artic Blast to chill us all!! IN A BIND COOKING wants to help you out with your busy week and keep you warm and comfy from the inside out!!

MONDAY: CHEESE TORTELLINI SOUP WITH BACON STUFFED ROLLS; This is a soup I could eat everyday...sauted bacon and shallots, then added to chicken broth with cheese filled tortellini and spinach...Oh make me smile...and served along side a homemade roll stuffed with bacon and cheese...yes now that says "HAPPY"

TUESDAY: STEAKHOUSE SHEPARDS PIE; This is lean ground sirlion and mushrooms all in a beefy gravy and topped with cheesey mashed potatoe's!!! Oh YES!!!

WEDNESDAY: COMFORT MEATBALLS WITH TWICE BAKED POTATOE CASSEROLE; everything that makes you think of home is in these meatballs!! and paired with Twice baked potatoe casserole...you are in buisness.

THURSDAY: ROSEMARY CURSTED CHICKEN WITH WILD MUSHROOM SAUCE AND HERB RICE; Tender Chicken tenders with a panko rosemary crust sauted in butter and served with a mushroom sauce and herb rice!

TUESDAY: CHICKEN AND NOODLES WITH FRESH BREAD: The all time comfort food for everyone, tender chicken and thick egg noodles come together to say welcome home after a long cold day! Fresh bread to dip with as well

WEDNESDAY: UNFORGETABLE CHICKEN CASSEROLE WITH PEPPERY CHEESE BREAD: This one will please your taste buds and your tummy...served with a crusty peppery cheese bread.

THURSDAY: SOUTHWESTERN CHILI WITH CORN PUDDING: The chili will warm you up fast not to spicy but full of flavor from start to finish...tender chicken , corn, fresh green chili's, great northern beans and served with my yummolishes corn pudding if you have never tried this you are in for a real treat corn, cream, poblano, anaheim, and red peppers join in to make you smile from ear to ear!!
