The first day of school has finally arrived and as my oldest starts a new job today in Lubbock and then classes on Thursday begin in Red Raider World, my little middle gal has a job interview and then gets ready for classes to begin in Aggie Land and my baby starts her Jr. year of High school I am sad that the house is so quiet but also excited to see what is in store for each of them!
MONDAY: CLOSED
TUESDAY: GREEN CHILI CHICKEN ENCHILADAS; tender chicken and green chilis all piled up with fresh corn tortillas and cheese!
WEDNESDAY: TEXAS HASH AND FRESH BREAD: this is a great family friendly meal, lean ground beef, tomatoes and rice and cheese all baked up to make for a super filling meal.
THURSDAY: SPICY ORANGE CHICKEN AND RICE WITH STEAMED GREEN BEANS: tender chicken breasts all bathed up in a spicy asian orange sauce and served over white rice with steamed green beans on the side!
