MENU FOR THE WEEK OF MAY 2 - MAY 5

Happy May Day to you all! Hope this weekend has been a good one, many thoughts to the people in Alabama and Mississippi as they begin the clean up and continued search for loved ones.

With the weather causing me great confusion as to what season we are in here in the great northern tundrea of the Texas Panhandle, this weeks menu has a little bit of all the seasons.

MONDAY: GREEN CHILI CHICKEN ENCHILADAS; These will warm you up this day as the weather looks to be chilly at best. Tender chicken, fresh green chili's corn tortillias and cheese all baked up to a big smile for everyone.

TUESDAY: PARMESAN CHICKEN WITH PENNE PASTA IN A TOMATO BASIL CREAM SAUCE; Yummmmmm.....tender chicken breaded and sauted in olive oil and butter then baked to perfection and served over penne pasta with a rich and tangy tomato basil cream sauce.

WEDNESDAY: CLOSED FOR SPECIAL EVENT

THURSDAY: SESAME CHICKEN SALAD WITH ROSEMARY OLIVE OIL AND BLACKED CRACKED PEPPER KNOTS; Tender chicken in a tangy sesame sauce, plated over a bed of greens, and topped with chinese noodles and a gingerroot dressing! Along with the bread knots that are worth every bit!
