MENU FOR THE WEEK OF APRIL 24 - 28

Today is Easter and as we celebrate the Resurrection of our Lord, I come to recall that He is the "Bread of Life" through Him our spiritual lives are fed and our souls noursished.

In keeping with the theme of Bread and life, my mind began to wonder (as it often does)on my own love of Bread...I never knew, I had this passion until I ventured home with my then "boyfriend" Stephen to meet the family. You must understand that bread in my home growing up was wheat or white from a bag and only "daddy" had it with his meal. I found it boring without flavour and SQUARE!

So as I set down with this family that would soon welcome me as one one of their own, I have for the first time the pure pleasure of "BUTTER BREAD" yes you heard me right, plain white bread with BUTTER!

Well to make a long story short, which is always painful for me, I was sure I was in love not only with Stephen and his family but Bread and Butter. Side point to the story Alex has always stated that Grandma Schumacher should open a resturant and sell "toast" all day..he believes she would make a killing...and I have a firm thought that she would.

Through the past 23 years I have thrilled at the adventure of trying new breads, experimenting with additons to my dough but never forgetting that when we sit together as a family and break bread our hearts and bodies are filled with not only physical nourishment but with the unending love of family and faith.

So I invite you this week to break some bread with your family and by all means spread a little butter and love on each slice!

ON WITH THE MENU:

MONDAY: MACADAMIA AND PANKO CRUSTED CHICKEN WITH AN ORANGE BUTTER SAUCE OVER PENNE' PASTA AND A FRESH BAGUETTE; tender chicken breasts dipped and battered in a panko and macadamia nut crust sauteed in butter and baked to a delicate tenderness with a penne pasta in an orange butter sauce and a fresh baguette!

TUESDAY: LEMON CHICKEN TORTELLINI SOUP WITH A CRUSTY COUNTRY PAIN (BREAD)
tender chicken, tortellini and greens, all in a broth that screams comfort, along with a country loaf of pain (bread) sure to please and comfort a hard day
WEDNESDAY: MINI PAELLA WITH FRESH BREAD; tender chicken, chorizo , and shrimp in a saffron sauce with couscous. I promise you will like this!

THURSDAY: CHICKEN WITH MUSHROOMS IN A BALSAMIC CREAM SAUCE OVER NOODLES WITH OF COURSE BREAD! I should call this my Karley White meal as it is one of her favorites! but to tell the truth it is a favorite of all who par-take! so jump in and join the club, it will become if not already a favorite.
