Well road trip to Lubbock and College Station was a great success, and what a wonderful time to get to spend with Vance and Tiff!
While I was gone Tiff and I made a fish pie that was amazing....it will show up during Lent!

TUESDAY: PASTITSIO WITH FRESH BREAD: This is a greek pasta dish that is hearty but still light on the stomach!
WEDNESDAY: GRILLED CHICKEN LETTUCE WRAPS W/ SESAME MISO SAUCE: I must say I am really looking forward to wednesday!

MENU FOR THE WEEK OF FEBRUARY 6 - FEBRUARY 9
Well the superbowl has come and gone no matter who you watched it with I hope you had great food to go along with great company!
In a bind will be changing up a little bit over the next few weeks, I will be changing my daily meals to only two days a week as special events are becoming greater in demand. So excited about this! Special orders will always be welcome and maybe after the spring rush I will be back to a more routine schedule for meals.
WEDNESDAY: CHEESE-STUFFED PORK CHOPS WITH PASTA SALAD: bone in pork chops soaked in a brine then stuffed with provlone cheese!
THURSDAY: CHILI WITH CORN PUDDING! this will hit the spot!

MENU FOR THE WEEK OF JANUARY 30 - FEB 2
Well the end of January is upon us and the month of love is knocking at our door! Here is hoping each of you are blessed with more love in your life than you know what to do with!
MONDAY: BEEF STROGANOFF WITH BUTTERED EGG NOODLES: lean beef and sweet onions in a mushroom broth layered over hot buttered egg noodles.
TUESDAY: PARMESAN CHICKEN WITH PENNE' PASTA AND A TOMATO BASIL CREAM SAUCE: tender chicken breasts coated in a crispy batter and sauted to juicy yummyness, then layered over pasta in a rich tomato basil cream sauce!
WEDNESDAY: LEMON CHICKEN AND RICE: tender chicken marinated then coated and fried up then bathed in a lemon sauce and rice.
THURSDAY: CLOSED FOR SPECIAL OCCASION

Well hard to believe we are already in the third week of the new year! I hope everyone's gotten in the flow of writing 2012, and why is that so hard to get used to every year...we know it's coming!
Good luck to all the kids in stock show this week as well as their parents.
MONDAY: CHICKEN POT PIE WITH ROSEMARY CHEDDAR CRUST; this is a very comforting meal, tender chicken veggies in a creamy sauce under a blanket of a flakey rosemary cheddar crust and baked to yummy deliciousness!
TUESDAY: BACON WRAPPED MEATLOAF WITH CHEESEY TATORS: Oh boy this is just plain ol' good!
WEDNESDAY: LASAGNA; gotta love lasagna and my favorite part is knowing there will be left overs the next day for lunch!

Well we made it to another year! Hard to believe how fast 2011 passed by, most of it was full of blessings beyond measure, but along with those great moments always come a few bumps in the road. However I am thankful for the opportunity to learn from these bumps and continue on to being the kind of person I know God has in mind for not only myself but a better person to all those I meet. Happy New year and may 2012 continue to bless each of you daily!
